Cheddar chowder is one of the best foods you can make during the cold winter months. It’s perfect for family gatherings or just for keeping warm by the fireplace. Below is the only recipe you will need to make cheddar chowder that your whole family with love!
Rachel's Famous Cheddar Chowder
- 2 cups diced potatoes (do not peel)
- 1 cup diced carrots
- 1/2 cup diced celery
- 1/4 cup chopped onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
Mix above ingredients in a microwave-safe bowl and cover with 2 cups of water. Cover and microwave for 30 minutes on high heat.
While the vegetables are in the microwave, combine 1/4 cup flour with 1/4 cup melted butter to form a paste. Slowly add 2 cups of milk, 1/4 cup at a time, whisking to blend.
Stir 2 cups shredded cheddar cheese into the milk mixture (and 1 cup cubed ham if desired).
After cooking the veggies for 30 minutes, stir the milk/cheese mixture into the vegetables (be sure NOT to drain the vegetables before adding the milk mixture).
Cover and return to microwave for an additional 15-20 minutes or until thickened.
It may look a little strange when you are in the cooking process, but we promise that you will have the best cheddar chowder that you have ever had. But it is important that you make the recipe your own. After you follow the recipe a few times you can start to experiment by adding a few of your own ingredients. This could mean adding more salt and pepper, or adding a little bit of a spice by adding some hot sauce.
